The Specific Carbohydrate Diet Project

In October 2009, I followed the Specific Carbohydrate Diet for a week.  I chose this project for two reasons: I wanted to see if I could actually follow the diet and I wanted to raise awareness for an alternative, and perhaps better, option for people who are suffering from grain allergies and intestinal disorders.


What is the Specific Carbohydrate Diet?  It's a diet in which eaters focus on real, whole foods while shunning many carbohydrates, including all grains and most sweeteners.  Honey and fruit are allowed because they are made of mostly simple sugars.  Most legumes are out, but red lentils are allowed.  Because I'm vegetarian, when I followed the diet, I did not eat meat, but I ate lots of eggs, fruit, vegetables, coconut milk, yogurt, and nuts.
