I hope you give them a try, but watch out: you might end up as hooked on making them as I am!<BR/><BR/>JD, be brave! Get thee a Silpat and fire up the oven. Falafel are really quite friendly to make; you just need to have a delicate touch with them because the unbaked patties are a little more delicate than you might expect. It's also helpful to use two pancake flippers for moving them around--it's sort of like having two hands for the job :-)<BR/><BR/>I'm reporting back about using my Classic Italian Vinaigrette as a sauce: it's terrific! I made up a little bed of lettuce, placed two oven-warm patties on that, scattered little rounds of fresh mozzarella on top, and spooned some dressing over the whole thing. Delicious!
