There are small farms around...Rachel, I love that! There are small farms around here; sometimes they show up at the farmers' market with their eggs and pasture-fed beef. When I see them, I do buy eggs from the farmers' market. And I have got to try your banana bread recipe, especially with a month of vegan eating just around the corner! :-) Also, maybe I'll try a vegan version of those "muffin top" chocolate cookies that we all loved (back in 2009! As for egg substitutes, the apples and bananas work just fine!
